Chicken and baked Rhubarb: one chicken (recipe calls for free range/organic) cut into 8 pieces, 11 oz rhubarb cut into pieces and mixed with 1 cup sugar. Sprinkle Chicken with salt and peper. Bake Chicken at 400 degrees for 30 min in open oven proof dish then put rhubarb mixture under chicken and roast 15 minutes more. Recipe is from the Nordic diet.
